Manufacturing Process

At Ducoy we work all year round to take care of our olive trees and we are present throughout the entire process of producing our oils , from selecting the olives on the tree to packaging. In this way, we can offer the consumer a product with a guarantee of excellence.

  • 1. Conservation of the farm

    We care for the health of our trees throughout the year, ensuring responsible and sustainable management at every stage. We carry out tasks such as pruning, weeding and maintaining the vegetation cover. Each action is designed to promote the health of the trees and improve the quality of the oil we produce.

  • 2. Selection of the olive

    During the month prior to harvesting, samples are taken from the different plots on the farm to identify the highest quality fruits. We hand-pick those that reach an optimal state of ripeness. This careful selection ensures that every drop of our oil reflects the essence and flavour of our olive trees.

  • 3. Collection

    We start harvesting olives before they begin to ripen, usually in mid-October. Most of this process is carried out mechanically.

  • 4. Transport to the oil mill

    Transport to the mill is carried out quickly to ensure the quality of the olives and maintain minimum acidity levels. Upon arrival at the mill, the cleaning and weighing process begins. Air is used to remove the leaves, and the cleaned olives are then weighed.

  • 5. Grinding and Blending

    The mill crushes the olives, and in a few hours a paste is obtained which is then transferred to a refrigerated mixer. In this process, the mixture is stirred, which allows the cold extraction of the oil.

  • 6. Oil conservation

    We decant in a vertical centrifuge. At the end of the process, the oil is filtered and stored in a refrigerated cellar, where it rests in 15,000-litre stainless steel tanks, thus ensuring optimum quality.

  • 7. Packaging

    We carry out packaging in a mechanized manner in recyclable and environmentally friendly containers.
